GF Soft & Buttery Crescent Rolls


The first year we were gluten free I tried to make some rolls for Thanksgiving and they totally bombed! They were ugly burned, brick biscuits that I just threw away. The next year I searched for several new recipes and decided to give this one a try. With just a few small changes to make it GF, it was a HUGE success!!!!

The original recipe came from A Thrifty Mom, which is a local blog all about couponing. If you've ever wanted to learn how to use coupons to save tons of money on your grocery bills, her site is an excellent resource! Occasionally she posts some yummy recipes too, so I gave this one a shot.

This GF dough is very soft, fun to play with, and you can actually roll it out on your countertop with a rolling pin. I've used it to make regular crescent rolls, added shredded cheese inside, added cheese and little smokies, and used this dough to substitute in other recipes that call for those pop up cans of crescent rolls, like my Calzone Pinwheels recipe.


The original recipe says to divide dough in ½ and make 2 batches, but that ends up too thick for this GF version, so I divide the dough in 4 sections to make twice as many rolls. One batch will make a total of 48 crescent rolls.



Isn't my little sis cute making these yummy rolls in my kitchen (wearing the apron I made her for Christmas!). Okay, moving on, here's the recipe!




Directions:

In large bowl add:

2 cups warm water ( if it is too hot or too cold…you will kill the yeast. So make sure it is warm).
2 TBS yeast
1/2 cup sugar

Stir together until combined, then give it a few minutes in the bowl, to make sure your yeast is working.

Then add:

3 eggs whipped lightly
3/4 cup melted butter
1 teaspoon salt

Mix well….

Start to wisk in the flour one cup at a time. Add 2 cups of GF Flour blend + 1 tsp. xanthan gum at a time, repeat for a total of 6 cups of flour and 3 tsp. xanthan gum.

You will need to switch over to a spoon to mix with, on about cup 4 of flour. Dough WILL be sticky, scrape down the sides of the bowl and cover with plastic wrap or a towel. Set aside in a warm place, (like a sunny window seat) and allow to raise until doubled in size. (if you are in a hurry let rise 20 mins other wise let it rise 60 mins). Works best to wait the full 60 mins.

Take off the plastic wrap, punch down to get the air out. You will need to dust with flour.

Take out 1/4 of the dough, spread on floured counter top. With your hands or a lightly floured rolling pin, make into a circle. Keep dusting with flour so it is easy to work with. (do the same with the other 3 sections of dough).

Cut into wedges with a pizza cutter, and roll up in to crescent roll shape. Or you can just make balls in the shape of dinner rolls. Here you can also add shredded cheese, little smokies, or any other filling you like.

Place them on a greased pan, Bake at 400 degrees for 8 min., then remove from the oven, immediately brush tops with melted butter, and place back in the oven on broil for 2 min. to lightly brown the tops.

Take off baking sheet, cool on cooling rack. Last but not least enjoy! Store leftovers in a ziplock bag in the fridge or freezer, microwave for about 40 sec. per roll to warm up leftovers.
